Chop the onion and garlic and sauté for a few mins until softened
Pour in 1 litre of stock and bring to a simmer
Loosely chop the head of broccoli and add to the pan and simmer for 10 mins.
Add the peas and cook for another 5 mins
Add the parsley and blend the soup
Return to the pan and add more stock if needed to get desired consistency
Drain and add the cannellini beans to the soup if using and warm through
Serve with a dash of lemon (optional) and a sprinkle of seeds
