- Preheat the oven to 180°C and line a baking tray with baking paper.
- In a large bowl, mix everything together to form a dough, then stir through the raisins.
- Grab about a tablespoon of dough and roll into a ball, then place the ball on the paper-lined baking tray.
- Repeat with the rest of the mixture, placing the balls at least 10cm apart.
- Bake for 10 minutes in the preheated oven until they have turned into golden-coloured cookies.
- Leave to cool on a wire rack then dig in.

Raisin and Cinnamon Cookies
Cinnamon is one of my favourite spices. It has a lovely warm sweetness and also helps to regulate blood sugar levels so is great for sweet cravings. Whilst I make these cookies throughout the year, the smell of the cinnamon as they bake, always reminds of Christmas. I love serving these up to the girls with a glass of warm organic milk and for me a warming drink of whatever I'm feeling.
Ingredients
120g rolled oats
120g spelt flour or gluten free flour
120g coconut sugar
½ tsp bicarbonate of soda
·½ tsp salt
150g coconut oil, melted
1 large egg
2 tsp vanilla extract
1 tsp cinnamon
100g of raisins
