We all know breakfast is the most important meal of the day but often the one that gets overlooked because as we all know, mornings are err, frantic. But rather than reaching for the sugar packed cereal that's going to leave you feeling hungry very quickly, try out these tried and tested mid week morning recipes which are easy to put together and super nutrient dense.
Top tip: Buy some good quality bread (not the stuff that can sit on a shelf for weeks on end - it is just packed full of added fats and preservatives), slice it up and put it in the freezer. That way on a morning you can just grab some out of the freezer and pop into the toaster. Tesco do some great breads in their bakery section. Our favourites are the sourdough, sourdough and rye pave or the organic wholemeal loaf.
Toast with mashed avocado.
Pop the toast in the toaster and smother in avocado. Top with some tomatoes if you fancy.
Toast with nut butter and banana slices
Pop the toast in the toaster and smother in a nut butter of your choice. We love almond and peanut butter in our house - (just avoid any with added sugar or palm oil - you want the plain stuff) . Top with sliced banana (or swap the banana for sliced apple.)
Overnight oats
These are simply oats soaked in liquid overnight. That's it. They are ready to eat in the morning. Check out this post for more overnight oat recipes.
Ingredients
- 50g rolled oats
- 150ml milk (dairy or nut)
- 1 apple grated
- Pinch of cinnamon
- Handful of seeds for topping
Just put together into a jar or Tupperware, give a stir and pop in the fridge overnight. Grab a spoon and eat in the morning or heat up on a saucepan if you like them warm.
Yoghurt bowl
Mix together some full fat natural or greek yoghurt with some oats. Top with some sliced banana and a sprinkling of nuts and seeds.
- 150g yoghurt
- 50g oats
- 1 banana sliced
- Sprinkling of seeds (optional)
Scrambled eggs
Honestly, this can be done in 5 minutes. Scrambled eggs are often overlooked mid week but they really are quick to make.
Just whisk up a couple of eggs, melt some butter in a pan, add in the eggs. Whilst the eggs are cooking pop some toast in the toaster. Give the eggs a stir, butter the toast and voila - a protein rich meal to fuel you up for the day!
